Chef Hiroyuki Zama Tanaka of Philadelphia's Zama restaurant introduces the Bibou Roll today - the world's first snail roll.  The roll was a collaboration between Zama and chef Pierre Calmels of Bibou (hence the name). It debuts at Zama on National Escargot Day.

The roll showcases extra large escargot sauteed with shallots and shiso in a soy dashi butter, over an open-faced tempura haricots verts and fennel maki topped with shelled edamame and shiso. A portion of the proceeds from sales of the roll will go to The Children's Hospital of Philadelphia (CHOP).
