St. Patrick’s Day may feature a lot of alcohol, but there’s also a major food component to the holiday. Luckily, the feast doesn’t have to end with corned beef and cabbage.

Green Velvet St. Patrick’s Day Cupcakes

If you want a green dessert, then this recipe is for you.

What You Need:

  • 1 Cup Butter
  • ½ Cup Granulated Sugar
  • 2 Cups All-Purpose Flour
  • 2 Tsp. Vanilla Extract
  • 2 Tsp. Lime Juice
  • Zest of 2 Limes
  • 1 Cup Walnuts, Chopped
  • ½ cup Confectioners’ Sugar (For Icing)
  • 2-3 Tbs. Lime Juice (For Icing)

-To make, preheat oven to 325 degrees F. In a mixer, combine butter, sugar, vanilla, lime juice and zest and mix on medium-high speed for 3-4 minutes. Reduce the mixer to low speed and slowly incorporate the flour and walnuts until just combined.

-Scoop the dough into 1-inch balls and roll gently. Set on a parchment lined baking sheet and bake for 20 minutes. Remove from over to cool completely.

-For the icing, mix confectioner’s sugar and lime juice 1 tablespoon at a time until it just comes together in a dense, yet liquid, consistency. You can add a few drops of green food coloring to the icing for extra flair.

-Roll each cooled tea cake in icing and set aside to cool.

In case Irish Soda Bread isn’t your thing, then this recipe is perfect for you.

What You Need:

  • 1 cup Warm Dark Stout Beer
  • ¼ pkg. Fast-Acting Yeast
  • 4 tbsp. Molasses
  • ½ tsp. Salt
  • ½ cup Whole Wheat Flour
  • 1 cup Dark Rye Flour
  • 1 ½ cups Bread Flour
  • 2 tbsp. Cocoa
  • ½ cup Chopped Pecans
  • ½ cup Flax Seed

-To make, mix together the warmed stout beer, yeast and molasses in a small bowl and set aside to begin activating the yeast. The process should begin foaming after a few minutes, allow it to go for about 5.

-In a stand mixer bowl, measure out the bread flour, whole wheat flour, dark rye flour, cocoa powder and salt and mix together. Turn the mixer on low speed and pour in the yeast mixture. Continue mixing until the dough comes together. You may need to add ¾ cup-1 cup of water depending on the moisture needs of the flour.

-Once the dough has combined, turn the mixer up to medium speed and allow the dough to knead for 6-10 minutes. If dough appears to be too wet and sticks to the sides of the bowl, gradually add more flour, 1 tablespoon at a time. In the last few minutes of the kneading, add in the flax seeds and pecans.

-Flour a cutting board or counter and give the dough a few final kneads by hand. Shape into a loaf and place on either a baking sheet with a dusting of cornmeal or in a bread pan. Cover with a wet rag or plastic wrap and let rise for 30-45 minutes.

-Slash the bread with a sharp knife and bake at 425 degrees F for 25-30 minutes. Remove from the oven and let cool.
