Duff Monster Cupcakes

Duff Monster Cupcakes
Get really creative with Duff Monster Cupcakes by Baketivity this Halloween. Baketivity

These cupcakes, which are a recipe that can be created at home using a kit from Baketivity, allow for both beginners and more advanced chefs to create a fun dessert.

What You'll Need:

  • Included with the Baketivity Kit: Flour, Sugar, Baking Soda, Cream of Tartar, Salt, Cocoa Powder, Vanilla Sugar, Confectioners Sugar, Food Coloring, Couple, Grass Tip, Piping Bags, Coating Chocolate (in White, Brown and Blue colors), Monster Mall

Additional Items:

  • 1 ½ cups unsalted butter
  • 1 tsp. Instant coffee (optional)
  • ¾ cup water
  • 1 egg
  • ¼ cup + 2 tsp. Whole milk
  • Tools: 12 cup muffin pan, 12 cupcake liners, 3 mixing bowls, whisk, medium saucepan, measuring utensils, cookie scoop, wire rack, electric beater, sieve, rubber spatula, scissors, spoons, parchment paper, 3 microwave-safe bowls and an offset spatula or knife

How To Make:

  • Preheat oven to 350 degrees Fahrenheit. Soften 1 cup of butter on the counter for frosting. Line a muffin pan with 12 liners and set aside.
  • In a large bowl, whisk together the flour, sugar, baking soda, cream of tartar and 3 salt packets, then set aside.
  • In a medium saucepan over medium heat, melt ½ cup of butter. Whisk in instant coffee (if using), cocoa powder and water. Heat for one minute, stirring constantly.
  • Pour the melted butter mixture into the flour mixture and whisk until well combined.
  • In a medium bowl, whisk egg, ¼ cup milk and 1 vanilla sugar packet. Add it to the batter and whisk until smooth (the batter will be very runny).
  • Scoop or spoon batter into the cupcake liners and fill about ¾ of the way. Bake for 15-20 minutes or until a toothpick inserted in the center comes out clean. Let cool completely on a wire rack before frosting.
  • To make the frosting: In a large bowl, beat the softened butter until it is smooth, creamy and a light-yellow color. Use a sieve to sift in the confectioners' sugar a little at a time, beating for a few seconds between each addition. Use a rubber spatula to scrape the sides of the bowl. Add 1 salt packet and 1 vanilla sugar packet, and continue beating. Add 2 tsp. Milk and beat and scrape the bowl again.
  • To decorate: Choose one monster color from the Monster Mall mood board and add drops of desired food coloring to the bowl of frosting. Beat on low until evenly distributed. Unscrew the ring from the coupler base and push the narrow end of the base into a piping bag as far as you can. Cut the tip of the bag just past the coupler base. Place the piping tip on the outside of the bag and secure it by tightly screwing the ring back into the base. Fold down the top of the bag and using a rubber spatula, fill it halfway with frosting. Unfold the bag and gently push the frosting to the bottom, twisting the bag closed. Holding the piping bag above the cupcakes, squeeze the bag and begin frosting by moving your hand in either a circle or back and forth until the entire cupcake top is covered in monster "fur."
  • To finish decorating: Lay a piece of parchment paper over the Monster Mall traceable sheet. Melt brown coating chocolate in a microwave-safe bowl at 15-second intervals until it is smooth. Pour the melted chocolate into a piping bag, then use it on top of the parchment paper to trace the mouths and parts in section 3 that you want for your monsters. Repeat the steps for the white chocolate and trace the shape of the chosen eyes. Slide the template out from underneath the paper and pipe white teeth on the mouths to match the template. Repeat the steps again with blue chocolate, this time put a blue circle over each eye, and use brown leftover chocolate to add a dot to the center of each eye. Let the features set in the fridge. Once set, carefully lift off the parchment paper and using a small offset spatula or knife, place them onto each cupcake, either standing or flat.

Hocus Pocus Cookies

Hocus Pocus Cookies
Hocus Pocus cookies are the perfect Halloween treat Scarlett's Cookie Bar

These cookies, by Scarlett's Cookie Bar, which are inspired by the classic Halloween film (and perfect for viewing the new sequel), feature a green "witches brew" frosting in the center.

What You'll Need:

  • 1 cup sweet cream unsalted butter, at room temperature
  • ¾ cup sugar
  • 2/3 cup packed brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla
  • 2 ¼ cups flour
  • 2/3 cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • ¼ teaspoon salt
  • 1 container of white frosting
  • 5 drops of neon green food coloring
  • 2 bags of Ghoul Mix M&Ms-green, orange and purple colors

How to Make:

  • Start by preheating the oven to 350 degrees. Prep a cookie sheet with parchment or wax paper and empty M&Ms into a small bowl.
  • In a large bowl, mix together flour, baking soda, cocoa powder and salt.
  • Using an electric mixer, cream butter and sugars. Add in eggs and vanilla and continue to mix. Slowly add in dry ingredients and mix as you go. Finally, add one package of M&Ms into the mix.
  • Once the dough is created and thoroughly mixed, take two teaspoons to form a2" ball and press into the bowl of leftover M&Ms. Place the cookies on the cookie sheet, about 2-3" apart and bake in the oven for 8-10 minutes.
  • To make the "witches brew": Scoop frosting into a microwaveable bowl and heat for 15 seconds to soften. Stir in the food coloring until the frosting is green. Place the needle of a flavor injector into the bowl of frosting to pull up the frosting and fill the injector (this may take some time). Poke the side of a cookie and inject frosting into it, just until the top of the cookie cracks. Repeat until all cookies are filled with frosting (and keep the injector needle free of cookie bits)
