A stack of freshly made warm pancakes can make sleepy mornings so much better, blessing the taste buds with the sweet flavor of the dough and maple syrup or honey.

Apart from the taste, people also love this flavorful breakfast staple for a few more reasons -- they are easily made, one can go for the gluten-free variant, and, most importantly, they evoke feelings of nostalgia.

Pancakes are a clear winner as far as versatility is concerned and below is one such recipe of the sweet treat that is so tasty you can't stop at just one or two.

Ingredients:

Eggs- 2 large

Sugar: 1/4 cups

Vanilla essence: 1/2 tablespoon

Salt- 1/4 teaspoon

Flour- 1 1/2 cups

Baking powder- 1 teaspoon

Baking soda- 1/4 teaspoon

Vegetable oil- 2 tablespoons

Procedure:

In a blender jar, add eggs, buttermilk, sugar, vanilla and salt, and blend at the lowest speed until well-combined. Add the dry ingredients -- flour, baking powder and baking soda, and continue to blend until the batter is fully-combined and thick.

Heat a pan on medium flame and brush the inside of a ring mold with some oil or butter. Add the remaining oil into the pan and place the ring mold inside the pan. Now, pour the batter into the ring mold's cavity so that it acquires a tall and round shape. Make sure the pan is well heated and the ring mold half-full so as to avoid spillage. Cook the pancake for four minutes and then flip over, making sure each side is golden brown and the inside is no longer runny.

Cook as many as you want following the same process and serve in stacks with honey or syrup drizzled on them.
